Ice Cream


Ice Cream Cone

 

Last week I took my children to a restaurant.   My six-year-old son asked if he could say grace.
 As we bowed our heads he said,  "God is good. God is great.  Thank you for the food, and I would even thank you more if Mom gets us ice cream for dessert.  And Liberty and justice for all!
   Amen!"
 

 
  Along with the laughter from the other customers nearby I heard a woman remark,  "That's what's wrong with this country.  Kids today don't even know how to pray.  Asking God for ice-cream! Why, I never!"
 
 
 Hearing this, my son burst into tears and asked me,  "Did I do it wrong? Is God mad at me?"
 As I held him and assured him that he had done a terrific job and God was certainly not mad at him, an elderly gentleman approached the table.  He winked at my son and said,
 "I happen to know that God thought that was a great prayer."
 "Really?" my son asked.
 "Cross my heart," the man replied.
 Then in a theatrical whisper he added (indicating the woman whose remark had started this whole thing), "Too bad she never asks God for ice cream.  A little ice cream is good for the soul sometimes."
 
 Naturally, I bought my kids ice cream at the end of the meal.  My son stared at his for a moment
 and then did something I will remember the rest of my life. He picked up his sundae and without a word, walked over and placed it in front of the woman. With a big smile he told her,
 "Here, this is for you.  Ice cream is good for the soul sometimes; and my soul is good already."

We celebrate the "luck o' the Irish" this month.  And for good
Ron Dutton reason.  Where would we be without Irish Americans?   But when it comes to your life and health and the lives of your family members, it is important that you not leave it all up to "luck."   Adequate insurance keeps you from having to rely on luck when it comes to your well-being.

Chicago River Dyed Green

The Chicago River is Dyed Green Every Year

Quick trivia question: Which segment of America accounts for nearly 12% of the population and has had a significant influence in shaping our way of life?  Need more hints?
 This group of citizens produced eight signers of the Declaration of Independence and a whopping 22 of our presidents. Still stumped?  Think of the March holiday, St. Patrick's Day.  Our Irish American friends are a particularly important part of American heritage.

 

Irish immigrants participated extensively in the American Revolution, leading one British major general to testify that, "half the rebel Continental Army were from Ireland." Politically active, early Irish immigrants took personal responsibility to establish American self rule and freedom from tyrrany.

 

Irish work ethic came to the forefront with canal building, lumbering and civil construction projects. In addition, thousands of hard-working Irish immigrants became ranchers and farmers. Others got more meager wages as hotel maids and textile workers. Despite starting at the low end of the pay scale, by 1900 most recently-migrated Irish workers were earning wages on a par with their more established neighbors. By 1945, Irish immigrants were found in the higher realms of the social heirarchy, thanks to the large number who were completing college.

 

Other contributions from this amazing culture include a large number of police and fire department workers of Irish descent. Irish American entertainment icons include: James Cagney, Bing Crosby, Walt Disney, John Ford, Judy Garland, Grace Kelly, Spencer Tracy and Gene Kelly, to name a few.

 

This month, celebrate the contributions of your Irish neighbors. They deserve it.

National Nutrition Month 

 

                                   Eat Right With Color

 

As trends continue to indicate Americans are interested in improving their diets and leading more healthful lifestyles, the American Dietetic Association reminds everyone that an easy way to focus on eating better is to "Eat Right with Color," which is this year's theme of National Nutrition Month.  Each March, ADA focuses attention on returning to the basics of healthy eating.  This year's National Nutrition Month theme encourages consumers to remember to include a colorful variety of fruits, vegetables, whole grains, lean proteins and dairy on their plates every day. 

 

"The American Dietetic Association is committed to improving the nation's health, and one of the ways we do this is by providing science-based nutrition information to consumers in a way that's easy to understand and apply to their everyday lives," said registered dietician and ADA President Judith C. Rodriguez.  "National Nutrition Month offers a great opportunity to focus people's attention on a universal theme that cuts through the clutter of information and gets back to the principles of a healthful diet."

Elaine's Recipe of the Month  
 


Irish Lamb Stew
 
 

ElaineIngredients:    

 

2 pounds - boneless leg of lamb, trimmed and cut into 1-inch pieces

1-3/4 pounds - white potatoes, peeled and cut into 1-inch pieces

3 large leeks, white part only, halved, washed (see tip) and sliced

3 large carrots, peeled and cut into 1-inch pieces

3 stalks celery, thinly sliced

1 14 oz. can reduced sodium chicken broth

2 teaspoons chopped fresh thyme

1 teaspoon salt

1 teaspoon freshly ground pepper

¼ cup packed fresh parsley leaves, chopped

 

Directions:

 

Combine lamb, potatoes, leeks, carrots, celery, broth, thyme, salt & pepper in a 6 quart slow cooker, stir to combine. Put the lid on and cook on low until the lamb is fork-tender, about 8 hours. Stir in parsley before serving.

 

 

Tip:

 

To clean leeks, trim and discard green tops and white roots. Split leeks lengthwise and place in plenty of water to release any sand or soil. Drain. repeat until no grit remains.
