Never Give Up

 

  Winston Churchill 

 

Sir Winston Churchill took three years getting through eighth grade because he had trouble learning English.  It seems ironic that years later Oxford University asked him to address its commencement exercises.

He arrived with his usual props. A cigar, a cane and a top hat accompanied Churchill wherever he went. As Churchill approached the podium, the crowd rose in appreciative applause. With unmatched dignity, he settled the crowd and stood confident before his admirers. Removing the cigar and carefully placing the top hat on the podium, Churchill gazed at his waiting audience. Authority rang in Churchill's voice as he shouted, "Never give up!"

 

Several seconds passed before he rose to his toes and repeated: "Never give up!" His words thundered in their ears. There was a deafening silence as Churchill reached for his hat and cigar, steadied himself with his cane and left the platform. His commencement address was finished.

Top 10 Scenic Drives in America

Having circled and criss-crossed America six times in the last few months (funerals, weddings, business, etc.), I thought I'd produce a top 10 list of the most scenic drives.  You will, no doubt, think I've gone off the deep end when I fail to mention your favorite, but then again you have the right to produce your OWN list.  These are my picks:

 

1.  Blue Ridge Parkway (Virginia and North Carolina)

Stretching some 459 gorgeous miles, this ribbon of highway should be at the top of anyone's list.  It connects two eastern national parks - Virginia's Shenendoah National Park, and North Carolina's Great Smoky Mountains.  The Appalachians are beautiful in every season.   

 

2.  Highway 1 (Pactific Coast Highway)

Another tride and true favorite.  Whether you're meandering through quaint little towns or clinging to the side of a sheer drop-off into pounding Pacific waves, you'll enjoy this stretch of road.  It offers surprises and beauty that is hard to beat. 

 

3.  Highway 12 (and Other Red Rock Areas of Utah)

You might wonder when you left planet Earth.  These red rock formations and massive stone mountains are pretty spectacular.  Bryce Canyon and Capitol Reef will amaze you with multi-colored splendor.  Zion National Park will blow you away.   

 

4.  Sonoma and Napa Valleys (California)

Beginning in Santa Rosa, CA - travel 132 miles of highway through lush wine country. 

 

5.  U.S. Route 1 (in New England)

Start in Connecticut and take this road up through Maine for an historical look at the architecture of colonial America.      

 

6.  Columbia River Gorge (Oregon)

Take I-84 from Troutdale east to Dodson, OR for a view of cascading waterfalls, hillsides of wildflowers and scenic river overlooks.

 

7.  Bayou (Louisiana)

Take I-10 through 600,000 acres of America's largest river swamp, the Atchafalaya Basin. 

 

8.  Overseas Highway (Florida)

Just how it sounds - you drive suspended above blue Forida waters connecting the Florida mainland with the Keys.  

 

9.  Lookout Mountain Parkway (AL, TN, GA)  

Panoramic vistas overlook seven states.  120 miles of cascades, canyons and caverns.

 

10.  Jackson Hole (Wyoming)

Highway 89 gives you canyon land, primeval forest and craggy peaks of the Tetons.

Elaine's Recipe of the Month 

 

Chicken-Chipotle Burrito Bowls 

 

 

Sombrero 

 

Ingredients:  

1 lb.boneless, skinless chicken breast halves, cubed

1 (15 oz)can black beans, drained and rinsed

1 cup frozen corn

2 cups canned, crushed tomatoes

1 to 2 teaspoons finely chopped canned chopotle chile peppers in adobo sauce

1/2 teaspoon ground cumin

1 tablespoon chopped fresh cilantro

1 clove garlic, minced

4 corn tortillas, cut or torn into bite-sized peices

2 cups hot cooked white rice

Reduced-fat dairy sour cream (optional)

Reduced-fat shredded cheddar or Monterey Jack cheese (optional)

Fresh cilantro (optional)

 

Directions:

Heat oven to 350 degrees.  Spray a 9x13-inch glass baking dish with Pam.  Arrange chicken in an even layer in baking dish.  In a bowl combine beans, corn, tomatoes, chipoltle chile peppers, cumin, cilantro, and garlic; pour mixture evenly over chicken.  Sprinkle with tortilla pieces.  Bake for 25 to 30 minutes or until chicken is tender and no longer pink. To serve, divide rice evenly among four serving bowls.  Top with chicken mixture. Garnish with sour cream, shredded cheese and cilantro, if desired.
